Z-Lycopene is naturally found in small quantities in several types of tomatoes and in higher amounts in processed food (such as: tomato sauce and tomato soup). Furthermore, it was found that Z-Lycopene has higher antioxidant properties than Lycopene (all trans- Lycopene).In raw food and processed food there are a wide variety of Z-Lycopene isomers, which differ in the geometrical configuration of the molecule. However, the most abundant isomer is the 5Z-Lycopene. Moreover, it was found that consumed Lycopene isomerizes to Z-Lycopene in the body, possibly in the enterocytes while the predominant isomer is the 5Z-Lycopene.
